Soya chunks are rich in protein and are good for health. In India, there are variety of recipes using soya chunks. This is a simple pulao recipe made with soya chunks and spices.

Soak the soya nuggets in hot water with salt. After 10 minutes remove and squeeze out the water. Keep aside
In a deep vessel, heat oil. Add the cumin seeds, cardamom, clove, bay leaf and cinnamon.
Sauté till aromatic and add the sliced onions. Fry till they caramelize.
To this add the chopped garlic and green chilies.
Sauté for another minute.
Add the tomatoes and fry till the tomatoes are all mushy.
Add the coriander powder, turmeric powder, salt and red chili powder. Fry till oil separates. This will take about 4-5 minutes.
To this add the washed and drained rice and soya nuggets.
Fry for 5 minutes and add 1 ½ cups of water. Adjust the salt if needed.
Cook covered for 10 – 15 minutes till all the water is dried and the rice is cooked through.
