Khaman Dhokla is a very famous Gujarati recipe which now popular all over India. Dhokla is made with gram flour and is completely healthy. The cooking procedure requires no oil and hence is a favourite among weight watchers. Its mostly eaten for breakfast or evening snack

Steps

  1. In a large bowl mix the gram flour, semolina, lemon juice, ginger green chilli paste, sugar and salt. Add about ¾ of water or less to make a thick smooth batter. The consistency of the batter should be like the batter for the cake but a little thin.
  2. Grease a tin with oil. Mix the Eno or fruit salt and sprinkle little water on top of it. As soon as the bubble arises fold it gently. Pour it into the greased tin.
  3. Steam for 15-20 mins. Check if it's done by inserting a skewer into the middle just like to do for a cake.
  4. In a small pan heat 1 tbsp oil. Add the black mustard seed. Sauté till it starts to crackle.,
  5. Add the asafoetida, sesame seeds and curry leaves. Sauté for 30 seconds and add 3-4 tbps water. Let it come to a boil.
  6. Pour it evenly over the cooked Dhokla and cover it. Let it cool. Cut into squares
  7. Serve it with chutney.

Serving Instructions

Serve it hot with shavings of coconut and sweet chutney.
