Dim Kosha is very popular Bengali Main Course. Kosha is a type of cooking which requires pureed onions and spices. This recipe can be made with potatoes or chicken as well. Dim Kosha is also a popular food in roadsides of Bengal.

Steps

  1. In a wok heat the oil it it reaches its smoking point. Reduce the heat. Make 2-3 deep slit on the eggs making sure not to cut it in half. Fry the eggs till light golden brown in colour. Remove and keep aside.
  2. In the remaining oil add the lightly crushed spices , bay leaves and dried red chilli
  3. Sauté till fragrant.
  4. Add the pureed onions and fry till golden brown in colour. This will take about 5 minutes.
  5. Add the ginger garlic paste and fry for another minute or two
  6. In a small bowl mix the coriander powder, cumin powder. Turmeric powder, red chilli powder, salt and sugar with little water an make a paste.
  7. To the wok add the tomato puree and fry for a minute.
  8. Add the spices paste and fry till all the water evaporates and the oil separates from the spice mixture. Make sure to fry on a low to medium heat or else it may burn.
  9. Add a little water about ¼ of a cup and let it come to all.
  10. Add the fried eggs and simmer for 5 minutes.
  11. Serve hot

Serving Instructions

Serve it hot with Luchi, porotta or Bengali yellow pulao
