Bengali Yellow Pulao

Traditional Bengali sweet yellow pilaf.

This pulao is a Bengali speciality made on any special occasions. As Bengalis love to have a little bit of sweetness in their food, this pulao is sweet in taste. It's easy to make and can be made with or without a pressure cooker. This recipe uses a pressure cooker. Also the rice used in traditional Bengali gobindo bhog rice but basmati can be substituted in place of it.

  1. In a pressure cooker heat the heat.
  2. Add the lightly crushed whole spices and bay leaves.
  3. Sauté till fragrant
  4. Add the cashew nuts and fry till they are light brown.
  5. Add the washed and drained rice and fry for a minute.
  6. Add the turmeric powder , salt and sugar.
  7. Fry for another 3 minutes.
  8. Add 2 cups of water and mix everything well.
  9. Put the lid of the pressure cooker and pressure cook on high flame till 2 whistles.
  10. Let the pressure cooker cool down a bit. Lightly separate the grains of rice with a fork.
  11. Serve hot

Serving Instructions

Serve it hot with dim kosha or kosha mangsho. It also goes well with aloo dum.
