Paneer Bhurji is  a quick paneer recipe which every Indian household is familiar with. The key is to use fresh paneer. You can even use home made paneer. It tastes heavenly with hot parathas or on the bread. It also works wonders as a filling for sandwiches.

Steps

  1. In a wok heat the oil. Add the cumin seeds and slit green chillies
  2. Sauté till it sizzles and changes colour. To this add the onions and fry for about 3 to 5 minutes.
  3. Once the onions are fried, add the ginger garlic paste and sauté for about 3 minutes.
  4. Add the coriander powder, salt, red chilli powder, garam masala powder, turmeric powder and sugar. Sprinkle a little amount of water and fry till the water evaporates and oil separates. This will take about 3 minutes.
  5. Add the tomatoes and green bell pepper and mix well. Cook for one minute. Take care not to overcook the tomatoes as they will turn mushy. The key is to keep the tomatoes visible to enhance the look of the dish.
  6. Add the paneer, and milk and mix well. Cook for another minute. You can opt out the milk if you want a dry preparation. The milk is added only to make the dish thick gravy like.
  7. Add the chopped coriander and juice of lemon. Mix well and serve hot

Serving Instructions

Serve it with hot buttered paratha's or try it with buttered toast or as a sandwich filling
