In English, Bhindi is also known as okra or lady finger. Chatpati bhindi is a favorite dish of all north Indians. Children and adults, both love this recipe. If you want to pack this vegetable for lunch box or for travelling, then you should prepare it without tomatoes. Then it does not get spoil for long time.

Steps

  1. 1. Wash & dry the bhindi very well, using kitchen towel, otherwise it becomes sticky while cooking. Then cut it into round shape.
  2. 2. Take a heavy bottom pan and heat 2 tbsp oil, and add the bhindi into it.
  3. 3. Fry it for few minutes on high heat, stirring constantly and then at medium heat, for 10 minutes.
  4. 4. In another pan, heat the remaining oil and add cumin seeds. Let it splutter, then add sliced onions and fry until they become golden brown.
  5. 5. Add turmeric powder, red chilli powder, green chillies, tomatoes, ginger and chaat masala and mix well. Cook until tomatoes become soft.
  6. 6. Mix this tomato masala to the fried bhindi. Mix it well slowly and then cover the pan with lid and let it cook on slow heat for 5 minutes.
  7. 7. Remove it to the serving dish, sprinkle garam masala over it.

Serving Instructions

Chatpati bhindi goes very well with plain paratha and boondi ka raita.
