Rassam is a popular Andhra dish made with fresh tomatoes and spices. Rassam is typically tomato soup made with Indian spices to cleanse your palate. You can have it either before a meal, between meal or after meals. Many South Indians like to have it with rice as well.

Steps

  1. In a wok dry roast the cumin seeds, coriander seeds, fenugreek seeds, and peppercorn. Grind to a fine powder and keep aside.
  2. Wash the tomatoes and make a cross at the bottom of each tomato. Scoop out the eye of the tomatoes and blanch it in boiling water for about 2 minutes. Remove and cool. Peel out the skin and chops It up and mash a little.
  3. In a pan add 5 cups of water and bring it to a boil. Add the chopped and mashed tomatoes, red chilli powder, asafoetida, turmeric powder,tamarind pulp, salt and the Rassam masala.
  4. Cook it for 5-6 minutes of a medium to high flame till the water reduces to desired consistency.
  5. Serve hot with chopped coriander leaves on top.

Serving Instructions

Serve it hot with rice or as it is. You can also serve it as a soup with bread croutons.
