Bengali snacks made with plain flour and Nigella seeds.

Nimki is something which is available in Kolkata commercially as well. You can make it at home easily and store it in an airtight container.Its simple and easy to make and serves as a great snack to munch on.

  1. In a large bowl mix the plain flour, whole wheat flour, salt, baking powder, Nigella seed and sugar.
  2. Add the oil and mix till it resembles breadcrumbs.
  3. Add water slowly till it forms a stiff dough.
  4. Knead it for 5 minutes till it becomes pliable.
  5. Divide it into 4-5 portions
  6. Roll out each portion into ¼ inch thickness and cut it into small diamond.
  7. Heat sufficient oil in a wok and fry them on a medium heat till they are golden browns and crisp. Make sure to fry them on a low to medium heat and not on high flame as it will not be crisp then.
  8. Repeat for each portion and remove them on to an absorbent paper.
  9. Store them in an air tight container

Serving Instructions

Serve them with hot chai
