Malpua is a Bengali dessert. It's made with plain flour and semolina made into a a batter with milk and water. The roasted fennel seeds add a distinct flavour to this recipe. Traditionally its dipped in sweet sugar syrup as soon as its fried but you can opt it out and have just the fried ones as well.

  • ½ cup plain flour
  • ¼ cup semolina
  • ½ cup milk
  • ¼ cup water
  • ½ cup castor sugar
  • 1 tbsp fennel seeds
  • oil for frying

Steps

  1. In a frying pan dry roast the fennel seeds till light brown in colour. Crush them lightly with mortar and pestle .
  2. In a large bowl mix the plain flour, semolina, sugar and milk. Add the water to make a thick batter. You can add extra if it's too thick. The consistency should be a little thicker that like pancake batters
  3. Add the lightly crushed roasted fennel seeds.
  4. Mix well.
  5. Let it sit for 10 minutes.
  6. Heat the frying pan with enough oil. Make sure it’s a flat bottom frying pan and a non stick one too.
  7. Once the oil reaches its smoking point reduce the heat to medium.
  8. Pour and ladle full of the batter into the oil.
  9. Let it cook for 3 minutes on one side.
  10. Flip and fry the other side as well.
  11. Each side should be light golden brown in colour.
  12. Remove in an absorbent paper.

Serving Instructions

Serve hot with rich rabri or even ice cream
