Jhuri Aloo Bhaja is a must have during any Pujas. During the Durga Puja which is a famous Bengali festival this Jhuri Aloo Bhaja is served as a side dish with rice and lentils. This requires only one main ingredient that is potato but yet has a trick to it. If not done properly , the potatoes will form a lump and you will not get the fine fried potatoes.

Ingredients

  • 3 medium potatoes
  • 1 big bowl of water
  • enough oil for deep frying
  • salt to sprinkle on top

Steps

  1. Grate the potatoes on top of the big bowl of water so that they fall directly into the water.
  2. Drain and again fill the bowl with water.
  3. Let it soak for about an hour minimum.
  4. Once done, squeeze out the excess water out of the potatoes.
  5. Make sure you squeeze properly or else it may turn lumpy while frying.
  6. Heat up sufficient oil till it reaches smoking point.
  7. Lower the heat and add the potatoes.
  8. As soon as you add the squeezed potatoes , take a spatula and mix the potatoes the separate each grated potato.
  9. Let it cook till it turns golden brown.
  10. Remove onto an absorbent paper.
  11. Sprinkle salt and mix well.
  12. Store it in a an airtight container.

Serving Instructions

Serve it with hot rice and lentils or Bengali khichuri
