Ridge gourd in poppy seed paste gravy.

Main Ingredients Ridge Gourd

Jhinge or ridge gourd is another vegetable which is loved by Bengalis. This traditional recipe which is made in every Bengali household. It's fairly simple and requires very little spices. It's little and tasty.

  • 3 ridge gourd peeled and roughly chopped into large chunks
  • 4 tbsp poppy seeds
  • 2 tbsp sesame seeds
  • 3 green chillies ½ tsp turmeric powder
  • ½ tsp nigella seeds
  • salt to taste
  • 2 tbsp oil

  1. Soak the poppy seeds in water for 30 minutes.
  2. Blend it in a mixer with sesame seeds and green chillies.
  3. In a wok heat the oil.
  4. Add the Nigella seeds and sauté for 30 seconds.
  5. Add the ridge gourd and fry for a minute or two.
  6. Add the salt and turmeric powder and mix well. Cook till the ridge gourd becomes soft. Make sure not to add water as the ridge gourd will release water.
  7. Once the ridge gourd is soft and cooked, add the poppy seed paste and mix well.
  8. Cook till it reaches desired consistency. Keep in mind it’s a dry preparation.
  9. Serve hot.

Serving Instructions

Serve it hot with plain rice and dal
