Dhokar Dalna is a very famous and authentic Bengali cuisine. Dhokar is a deep fried Pancake. It is usually prepared by using 2 types of dal. I have prepared a variant of this dal using chickpeas paste.
Dhokar Dalna Ingredients
Take a wok, add 2 tbsp oil, add cumin seed and grated ginger in it .
When the seeds started spluttering add the chick peas paste in it, stir well and fry till the paste dry.
Now take a plate ,put 5-6 drops of oil and grease the plate,
Now take the paste and spread it on the plate.
After some time cut the spread into diamond shape .
Now take another wok , add oil and fry the diamond shaped cubes till golden brown.
Then take another wok, add 3 tbsp of oil, add dry red chilli and bay leaf in it. Add onion sliced and fry till the onion sliced turned into golden.
Add chopped tomato and fry, add onion paste, garlic powder in it and fry till the oil comes out of it.
Add cumin powder, coriander powder, turmeric powder, sugar and salt to taste and stir well.
Now add some water and continue , now add fried diamond shaped cubes and add garam masala and ghee, cover the wok with a lid and allow it to cook for 3-4 minutes and then turn off the flame.
