Aloo in Bengali means potato and the Potol is pointed gourd which Bengalis love to have. This is a simple every day recipe which is not only easy to make but is also low on spices which makes it easy to digest. The pointed gourd provides a lot of fibre and is good for health. Also this dish requires very less oil so you can have without being guilt conscious.

Ingredients

  • 2 large potatoes roughly chopped
  • 6 pointed gourd peeled and roughly chopped
  • 1 tsp nigella seeds
  • 2 green chillies slit
  • ½ tsp turmeric powder
  • Salt and 3 tbsp mustard oil

Steps

  1. In a wok heat the mustard oil till it reaches a smoking point. Then lower the heat and add the Nigella seeds and green chillies.
  2. Sauté for a few seconds and add the potatoes and the salt. Cook them covered on a low to medium heat till they are nicely done.
  3. To this add the pointed gourd and turmeric powder. Fry till the pointed gourd id cooked nicely.
  4. Adjust the salt if necessary and serve hot.

Serving Instructions

Traditionally it is served with plain boiled rice and Lentils. Its not a main course. It's only a side dish.
