Quick and Simple Rajasthani Spring Onion (Gundali) Curry.

Spring Onion for its unique flavor and smell is used in lots of Indian, Chinese and other Continental cuisines. In many of the soups and salads we just use a bit of it to add an extra taste and color to the dish. But in Rajasthan, Spring onion is prepared as a wholesome curry in itself. It is very quick and simple and yet a lip smacking curry. It goes best with Missi or Bajra ki Roti but can also be served and tastes good with normal chapati or rice and dal.

  1. Heat oil in a frying pan.
  2. When hot add cumin seeds and let it splutter.
  3. Now add the dry masala turmeric pwd, red chili pwd, dhaniya pwd, salt and mix well with few drops of water. Water is added just to make sure the red chilli powder does not get burn in the oil.
  4. Now add the chopped and washed spring onion.
  5. Add the amchur powder and kachari powder and mix well.
  6. Toss is for 2 mins and your dish is ready to serve.

Serving Instructions

Serve it hot Bajra , Missi or Moth ki Roti.
