Okra or Bhindi as called in India is a very tricky ingredient. If not cooked properly it turns slick and slimy. This particular recipe however, doe doesn't show any of those traits. It’s a very popular Punjabi recipe which is not only easy to make but is also delicious. You can serve it as a snack, or as an accompaniment with daals and subzis.

Steps

  1. Wash the okra and dry it off completely. This is essential or else it may turn slimy while cutting.
  2. When the okra is completely dry, cut into thin strips. Keep aside.
  3. In a large bowl mix the okra, red chilli powder, chat , masala, dry mango powder, garam masala, juice of lemon and salt with light hands.
  4. Sprinkle the gram flour and mix so that the okras are just coated with the gram flour.
  5. Heat oil in a wok. Fry the okra strips in oil till golden brown in colour. Make sure not to overcrowd the work.
  6. Remove and serve hot.

Serving Instructions

Serve it as a snack or as an accompaniments to daal or subzis
