It is a typical cucumber raita popularly known as “Kakdi Chi Koshimbir” in Maharashtra. It is made with yogurt and cucumber and is simple to prepare and usually eaten along with Roti, Curry, Dal and Rice.

  1. Mix chopped cucumber, yogurt, salt, sugar, chopped green chilies, roasted groundnut (peanut) powder.
  2. Add water as per the consistency you wish.
  3. Heat oil for tempering in a separate pan
  4. Once oil is hot, add mustard seeds and allow it to splutter.
  5. Add asafoetida and add tempering to the Cucumber Raita mixture.
  6. Garnish with cilantro and serve.

Serving Instructions

Serve with Roti, Curry and/or Dal, Rice.
