Baingan Ka Bharta is a very popular Punjabi dish. It is made by smoking the eggplant and then taking off the burnt skin and mashing the pulp. The procedure of burning the eggplants imparts a distinct aroma to the dish which is very unique. It also requires very less oil and hence is healthy.

Steps

  1. Take 1 tbsp oil in your palm and rub it well. Rub this oil to the eggplants visually. Put it on top of the stove so that it is cooked evenly on all sides. You can also bake it but burning it in stove imparts a distinct smoky flavour to the dish.
  2. Once they are burnt on all sides, remove and cool it off completely. Remove the burnt skin gently and mash up the pulp.
  3. In a wok heat the remaining 2 tbsp oil. Add the cumin seeds to it. As soon as it starts to crackle add the asafoetida and the onions. Fry the onions till they are soft and pink. This will take about 3 minutes.
  4. Add the green chillies and the ginger and sauté them well.
  5. Once they are done, add the tomatoes , red chilli powder, turmeric powder, coriander powder, garam masala powder and salt. Mix it well and let it cook till the tomatoes are all done and mushy.
  6. To this add the eggplants and mix everything thoroughly. Let it cook for about 3-4 minutes.
  7. Remove from heat and serve hot.

Serving Instructions

Serve it hot with piping hot rice and dal
